Cooking Together…Brie, Mango, and Avocado Quesadilla

I had this at a local restaurant, Ki’s in Cardiff, and decided to try and recreate it at home. It’s great as an appetizer, or you can make it for lunch or dinner.

Here’s what you need to get started…and some tortillas!

Thoughts on This Week’s Recipe:

Ease of preparation:
This definitely takes a little more time and effort than your average quesadilla, but it’s worth it!

Overall opinion:
I love this quesadilla…I think it’s such an interesting combination of flavors and I’m a big fan of avocados, mangoes, and brie, so it’s a win, win, win for me.

Would you make it again?
Yes, this is definitely one I’ll make again and probably keep trying new variations on it too.

Did you omit or add anything?

Would you change anything next time?
I would like to try it with goat cheese instead of brie next time.

In fact, I’m on a bit of a quesadilla kick right now. I also tried these Strawberry and Leek Quesadillas and loved them. So, if you’re not a mango/avocado fan, give these ones a try instead!

This week’s recipe comes from my amazingly talented friend Anjuli. She’s been telling me I need to try this for weeks now, so I’m going to do it…it sounds delicious, try it with me!
