I had this at a local restaurant, Ki’s in Cardiff, and decided to try and recreate it at home. It’s great as an appetizer, or you can make it for lunch or dinner.
Here’s what you need to get started…and some tortillas!
Brie, Mango, and Avocado Quesadilla
Red Pepper Flakes
In a pan, saute some chopped red onion in grape seed oil or olive oil with a dash of red pepper. Transfer to a plate.
Chop up a mango, an avocado, and some cilantro.
In the saute pan, place a buttered tortilla and brown it slightly. On another buttered tortilla, spread some Brie, avocado slices, mango slices, sauteed onions, and cilantro. Place in the saute pan and cover with the first tortilla until everything melts together nicely.
Remove from pan, and slice into pieces. Enjoy!

Ease of preparation:
This definitely takes a little more time and effort than your average quesadilla, but it’s worth it!
I love this quesadilla…I think it’s such an interesting combination of flavors and I’m a big fan of avocados, mangoes, and brie, so it’s a win, win, win for me.

Yes, this is definitely one I’ll make again and probably keep trying new variations on it too.

I would like to try it with goat cheese instead of brie next time.
In fact, I’m on a bit of a quesadilla kick right now. I also tried these Strawberry and Leek Quesadillas and loved them. So, if you’re not a mango/avocado fan, give these ones a try instead!

This week’s recipe comes from my amazingly talented friend Anjuli. She’s been telling me I need to try this for weeks now, so I’m going to do it…it sounds delicious, try it with me!
Anjuli’s Delicious Dish
Marinara Sauce (she recommends Arrabiata for a little kick)
1/2 cup heavy cream
Cook Gnocchi according to directions on package.
While Gnocchi is cooking, remove 3-4 sausages from their casings and brown the meat in a large skillet. Add in the Arrabiata sauce, stir in the heavy cream and heat through. Add the cooked gnocchi and serve.
Okay, I hope I got that right! I think this sounds like one I could even get the kids to eat! Let me know your quick and easy go-to recipe…I’d love to try it!
